Helpful hints cooking bison:
Since bison is lower in fat than other red meats, it is easier to overcook. Ground bison should be cooked to an internal temperature of at least 160°F. Steaks should reach an internal temperature of 145°F for medium rare or 160°F for medium. A bison roast will typically cook in about the same time as a comparable-sized beef roast. For the best results, always use a meat thermometer, as bison steaks typically cook one-third faster than beef steaks.

Once you place your order, it will be processed on a first-come, first-served basis. We anticipate that you can expect delivery within 1 to 2 months. The remaining balance must be paid prior to shipping.
You can place a non-refundable deposit to initiate the process. When your bison is ready to ship, the remaining balance will be due prior to shipping, or you may choose to pay in full at the time of ordering.
Your bison order will be shipped in insulated cooler boxes, using either dry ice or ice packs, directly to your door from our ranch. You will receive information on the carrier and tracking number.
On average, a good time frame for storage is one year, provided the vacuum seal has not been broken.
